MARBLE CAKE MUFFINS

 

Is there anything better than marble cake? Honestly, I don't think so. It's such a simple yet sooooo delicious and beautiful cake, you just gotta love it. Unfortunately, we don't get to have marble cake very often as we're only 2 people in our household and therefore a whole marble cake is bit much and we usually have some left over or it gets stale. That's exactly why we rarely had marble cake... until now! Because we thought, why don't we just transform marble cake into a smaller form: muffins/cupcakes, as 6 muffins is better for a smaller houshold like ours than a fullblown marble cake. Plus they are equaly delicous, so it's a win win situation really.

In this recipe, in addition to the classic ingredients of flour, sugar and baking powder, we also use coffee to intensify the chocolate flavour of the muffins. If you don't wanr this light coffee taste in your muffins just replace the coffee in the recipe (1:1) with plant milk. That works perfectly fine as well.

And last but not least to give your muffins the typical marbling, you should alternate filling the 2 batters, the chocolate batter and the vanilla batter, into your muffin tins. You can also use a toothpick or fork to lightly stir the chocolate and vnailla batter into each other. Now all that's left to do is put your muffins in the oven and in no time you got some beautiful and absolutely delicious marble cake muffins.
