CORN-CHEESE-FRITTERS! These super easy corn fritters are so delicious and an absolute comfort food. With the melted cheese on top and a side of tomato salsa for dipping, these are an absolute bomb! Let’s make these yummy corn fritters together.

Ingredients

  • 175ml plant milk

  • 125g cornflour

  • 3.5g instant yeast

  • ½ tbsp. sugar

  • Egg replacement for 1 egg (60ml water and 1tsp psyllium husk powder)

  • 1 shallot (small onion works as well)

  • 1tsp dried thyme

  • Salt+pepper

Preparation

1. Combine milk, flour, yeast and sugar. Then add in the egg-replacement. Leave at a warm spot to rise for 40 minutes.

2. Add in the finely chopped shallot and the seasoning. Carefully incorporate into the batter.

3. Now turn on your oven and preheat to 200°C.

4. Heat up some oil in a pan and with a tablespoon place small blobs of the batter into the pan. Fry the fritters until golden brown for about 2 minutes each side. (they can be a bit tricky to flip so be careful)

5. Put the fritters into an oven proof form, cover with vegan cheese and bake for an additional 10 minutes in your preheated oven.

6. Serve with a fresh tomato salsa and enjoy!
