'CHICKEN' AND WAFFLES

 

'Chicken' and waffles, a classic, right? But it wasn’t until 2020 that Michael and I tried this legendary dish. To be honest it was definitely not a combo we thought we’d enjoy THIS much. But we did. And thinking it through it definitely makes sense because both components on their own are sooo delicious, the crispy fried mushroom and the warm sweet waffle, and combining them just seems like the BEST idea someone, somewhere, somehow had. So props to whoever thought of this. This is genius. I hope every single one of you has had this freakin delicious combo at least once in their life, as we missed out on it for so long, and if not, what in the heck are you waiting for? Go make it... like NOW! Go, go, go!!!

Anyways, thanks for reading through my chicken 'n waffles TED talk as a reward you now get the recipe for this banger of a dish. I know it looks like a lot, but trust me you can do this and the final result will DEFINITELY be worth it, trust me!

For the WAFFLES:

  • 240g flour

  • Pinch of salt

  • 200ml plant milk

  • 70g butter

  • 1-2tbsp (vanilla) sugar

  • 7g dry instant yeast

  • 1-2tbsp apple sauce (just if you happen to have some at home this isn’t obligatory)

For your ‘CHICKEN’ SEASONING you need:

  • 1tbsp salt

  • 1tsp dried oregano

  • 1tsp dried thyme

  • 1-2tsp garlic powder

  • 1tsp dried parsley

  • 1tsp smoked paprika

  • 1-2tsp onion powder

  • 1tsp black pepper

  • ½ tsp ground fennel seeds

  • ½tsp cayenne pepper

  • 1tsp paprika powder

For the FRIED ‘CHICKEN’

…you need 10 0yster mushrooms or a chicken substitute of some sort (both work perfectly fine).

You need to prepare a ‘buttermilk’ Coating with:

  • 130 g vegan yoghurt ((unsweetened and unflavoured))

  • 40 g plant milk

  • ½ apple cider vinegar

  • 1tsp hot sauce or some agave syrup with some chili powder

  • 1tsp of your chicken seasoning

And a spiced Flour mixture with :

  • 150 g plain white flour

  • 1-2 tbsp corn starch

  • 1 tsp fine sea salt

  • 4 tsp of your prepared spice mix or some other chicken seasoning you like to use (old bay etc.)

  • ½ tsp ground black pepper

For the WAFFLES:

1) First things first you’re going to make the batter for your waffles. Warm up the milk and the butter in a pot until the butter is melted and the mixture is lukewarm. Add in the sugar and whisk. Sprinkle the yeast on top and let sit for 5 minutes.

2) Meanwhile combine the flour and the salt. Then add in the yeast mixture and the apple sauce (if using). Whisk until a smooth and thick batter forms. Cover and let rest for 45 minutes.

Meanwhile prepare the FRIED ‘CHICKEN’

1) For your spice mixture combine all the spices in a bowl and stir until everything is mixed together.

2) Then prepare the ‘buttermilk’ coating by combing all the ingredients in a bowl. Let sit for 5 minutes.

3) Mix the ingredient for your spice flour mixture until combined (in a bowl or a large dish).

4) In a medium sized sauce pan heat up some vegetable oil (about 3-4 cm high). It should reach around 160-180°C (be careful though not to heat it up too much). If you don’t have a thermometer (like us) take a wooden spoon and stick it into the oil until it touches the bottom of the pan. If there start to emerge bubbles where the spoon touches the bottom of the saucepan the oil is hot enough and you’re ready to fry.

5) Now but your oyster mushrooms or meat substitute, whichever, you’re using, into the ‘buttermilk’ coating and toss until they are nicely covered.

6) Now carefully transfer (one after the other) to the spice flour mixture, toss until coated and immediately put into your hot oil and fry until crisp and nicely browned. Take out and put on a kitchen roll to absorb the excess oil. You can toss them in your favourite hot sauce or just season them with some of your left over chicken seasoning.

7) The last step is baking your waffles. Heat up your waffle iron put some of the dough into the waffle iron. Close and bake your waffles for 3-4 minutes or until nice and golden brown.

8) Now you can assemble your chicken n’ waffles, drizzle it with a good amount of agave or maple syrup and enjoy!
