SWEET CHRISTMAS BREAD

 

Back at home when I was little we always had this 'St. Nicholas bread' on the 6th of December. My mom used to bake it the night before the 6th and the whole apartment would smell soooo good. I still bake this sweet brioche bread every year on this day as it makes me feel home and it's just super delicious. To share this Christmas tradition with you and to give you a taste of its bready deliciousness I'm going to share the basic recipe with you. The shaping is up to you, get creative, I guarantee you it's a lot of fun.

SWEET CHRISTMAS BREAD

Ingredients

  • 300g flour
  • 6g yeast (fresh or dry)
  • 40g sourdough (if you don't have sourdough you can add an extra 3g yeast to the dough)
  • 1/2 tsp salt
  • 1 tsp cardamom
  • 120ml plantmilk (cold)
  • 50g vegan butter/margarine (room temperature)
  • 20g date syrup or agave syrup or vanilla sugar
  • Egg substitute for 1 egg (mix 1/2 tsp psyllium husk powder, a pinch of turmeric, and 10tbsp water; alternatively add 20ml more plant milk to your dough)

Instructions

  1. Place all the ingredients in the mixing bowl of your kitchen machine and knead with the dough hook on for 10-20 minutes until an elastic dough forms (window test).
  2. Cover the dough and leave to rise at room temperature for 1 hour.
  3. Now remove the dough from the bowl, place it on a work surface, and shape it into the desired shape. You can make Snowmen, Christmas trees or Father Christmas faces. Everything is possible. I'd recommend to look for a template on the Internet (picture, video) beforehand so you know exactly what you want your final outcome to look like.
  4. Let the shaped dough rise for another 25 minutes at room temperature.
  5. Preheat the oven to 190C°.
  6. Brush your sweet yeast bread with some plant milk before transferring them to the oven and baking them for about 25 minutes until golden brown. Now your sweet Christmas bread is ready. Enjoy!
