Delicious sweet and fruity Christmas biscuits! I always made this cookies together with my mum back home and they still are one of my favorite christmas cookies to make. Easy to prepare and looking absolutely stunning! This cookies definitely turn every Grinch into a Christmas Lover, trust me!

CHRISTMAS STAR BISCUITS

Zutaten

INGREDIENTS
  • 200g flour
  • 50g walnuts
  • 10g oat flakes
  • 50g sugar
  • 100g vegan 'butter'/margarine (cold; cut into pieces) (e.g. Alsan Bio, vegan block)
  • 1 pinch of cinnamon
  • 1 dash vegetable drink (1-2 tbsp)
  • 6 tbsp blackberry jam
  • Icing sugar for dusting

Zubereitung

INSTRUCTIONS
  1. Finely grind the walnuts and oat flakes in a blender.
  2. Mix the flour, sugar and cinnamon together. Place on a work surface and make a well in the centre of the flour. Add the vegan 'butter'/margarine and walnut/oatmeal mixture to the well and rub the butter and flour together with your fingertips to make a crumbly dough.
  3. Now pour the vegetable milk over the dough and use both hands to shape the mixture into a dough ball (knead the dough only gently and not too long).
  4. Wrap the dough ball in cling film or place in a plastic bag and refrigerate for 30 minutes.
  5. Preheat the oven to 180 degrees Celsius.
  6. Roll out the dough thinly and cut out an equal number of small and large stars.
  7. Place the cut-out biscuits in the oven for 8 minutes.
  8. Then leave the biscuits to cool on the tray.
  9. Heat the blackberry jam, carefully put some jam on a large star biscuit with a teaspoon, place a small star on top of the jam and press down carefully. Allow everything to cool well, then dust the biscuits with icing sugar and enjoy.
