LEMON CAKE
Trust me when I say this cake is easy peasy lemon squeezy (pun intended). It's the best lemon cake you'll ever bake. It’s whipped up in no time and only uses simple ingredients. What more could you want? So without further ado here's the recipe for this sweet beauty.

LEMON CAKE
Zutaten
For the cake
- 300g flour
- 2tsp baking powder
- 1tsp baking soda
- pinch of salt
- 90g sugar (or more if you like it sweeter)
- 240ml plant milk (or 200 plant milk and 40 plant yoghurt)
- 2 tbsp lemon zest
- juice of 1 lemon
- 80ml (rapeseed) oil
For the icing
- 100g icing sugar
- 2 tbsp lemon juice
Zubereitung
- Pre-heat your oven to 180°.
- Mix the dry ingredients in a bowl.
- In a seperate bowl combine the wet ingredients.
- Now add the wet ingredients into the dry ingredients and whisk until just combined. (Don’t overmix)
- Layer your baking tin with a baking sheet and add in the batter.
- Bake at 180°C for 50-60 minutes or until a toothpick inserted comes out clean. Let cool down completely
- For the icing combine the icing sugar and lemon juice. Drizzle your finished lemone cake with your icing and enjoy !
