If you're a puff pastry lover like us I promise you, you'll love this recipe. It's perfect for when you're having people over or when you need to use up some leftover veggies or even for meal prepping. You name it. Where we come from there is of course the characteristic sweet apple strudel. However, there are also savory versions like the cabbage strudel or the pizza strudel. So we thought why not make an all veggies strudel with potatoes, pumpkin, mushrooms, and a lot of other beautiful veggies and herbs. You can basically use any veggies and as many different types as you want to, as long as you have your potato/pumpkin base to keep it all together. It's a super quick and super straightforward recipe and you'll probably have all the ingredients at home already (save the puff pastry ofc). So let's get started, shall we?
