BOLOGNESE RECIPE VEGAN

 

One of our favourite pasta sauces has to be the one and only bolognese sauce. One might say it is impossible to make a vegan bolognese sauce, but we beg to differ. With the right herbs and spices and a good tomato sauce you are very well able to make a delicious vegan bolognese sauce that is second to none. But as the saying goes: good things take time, and so this sauce takes a little longer to prepare than our usual recipes, but it is definitely worth it. You can even make double the amount and freeze or fill into jars to store for future use. The sauce is perfect for pasta or lasagne but you can literally use it in any which way you like, just dipping it with fresh bread is crazy good too (just FYI). Zutaten

Ingredients
  • 30ml olive oil
  • 1 onion
  • 3 garlic cloves
  • 2 bay leaves
  • 1 tsp dried thyme (or 1 sprig)
  • 1 tsp dried rosemary (or 1 sprig)
  • 2 carrots
  • 1 tsp garlic powder
  • 1 tsp paprika powder
  • ½ tsp smoked paprika powder
  • 1 tsp vegetable stock powder
  • 1 pinch white pepper
  • 5 tbsp tomato purée
  • 240g canned brown lentils (drained)
  • 140g soy granules
  • 500ml vegetable stock
  • 680g tomato sauce
  • 1 tsp pepper
  • 1 tsp salt

Zubereitung

Instructions
  1. Peel and finely dice the onion. Peel and finely chop the garlic. Finely grate the carrots. Heat the oil in a large saucepan and sauté the onion and garlic for 2-3 minutes. Add the thyme, rosemary and bay leaves as well as the finely grated carrots and sauté. Now add the remaining spices and the vegetable stock powder.
  2. Add the soy granules to the pot together with the drained lentils and mix everything well. Add the tomato paste and deglaze everything with vegetable stock and the tomato sauce. Stir well and simmer over medium-low heat, stirring occasionally, for at least 50 minutes. The longer you let your sauce simmer, the tastier and more flavourful it gets.
  3. Finally, remove the bay leaves and season the sauce with salt and pepper to taste.

Anmerkungen

 The sauce tastes great with spaghetti or incorporated into lasagna. It is also great to freeze or store in airtight jars in the fridge. Enjoy!
