VEGAN ZEBRA CAKE
Dry Ingredients
310g Flour
3tbsp Cornstarch
1tbsp Baking Powder
A pinch of Salt
Wet Ingredients
5-10 Dates (pre-soaked)
1/2tsp Cinnamon
340ml Plant Milk
2tbsp Apple Cider Vinegar
60-80g Rapeseed Oil
Some Vanilla Extract
1-2 tbsp. Crushed Flaxseeds
Combine dry ingredients in a bowl
In your blender combine the wet ingredients
Blend the wet ingredients together and add to the dry ingredients. Stir together until just combined.
Now put one half of the batter into another bowl and add 3tbsp of cocoa powder and 4tbsp of plant milk and stir until combined
Now to assemble the cake, first line your pan with some parchment paper.
Then add one large spoonful of the chocolate batter into the pan.
Next you add one spoonful of the vanilla batter on top of the chocolate batter (I recommend using 2 separate spoons), and so on and so forth until you used up all the batter. It helps when you give the pan a shake now and then to spread the batter more evenly.
Bake in your preheated oven (180°, fan) for 50 min, or until a toothpick inserted comes out clean.
Allow the cake to cool down completely before covering it in chocolate. Melt some chocolate, spread it onto your marble cake and decorate with some nuts or chopped chocolate. Enjoy.
