VEGGIE FRIED RICE
Zutaten
- 100g tofu (+ 1tsp oil for frying, use sesame oil or any other oil suitable for frying)
- 3 cloves of garlic (minced)
- 1cm ginger (grated)
- 2 tbsp sesame oil
- 200g veggies (sugar snap peas, mushrooms, spring onions)
- 300g cooked rice (of your choice)
For the sauce
- 3 tbsp soy sauce
- 2 tbsp black soy sauce (we use Healthy Boy Brand)
- 5 tbsp veggie broth
- 1 tbsp agave syrup or brown sugar
Zubereitung
- Cut your tofu into tiny cubes, heat up the oil in a frying pan and fry your tofu until crisp and brown. Remove the tofu from the pan and set aside.
- Finely chop the veggies you’re using.
- Now heat 2 tbsp sesame oil in a pan. Add in your garlic and ginger and sauté. Now add your chopped mushrooms and fry for a few minutes.
- Combine all the ingredients for the sauce in a bowl and whisk until combined.
- Add the sauce to the pan. Add in your fried tofu and the remaining chopped veggies.
- Lastly add in your cooked rice and toss until covered in the sauce. Fry for several minutes, stiring occasionally. Serve with sesame seeds and fresh chili and enjoy.
