UDON NOODLES

 

There probably is nothing better than stir fried udon noodles. And with this super easy recipe you can cook up your own panfull of delicious udon in no time. The ingredients are super simple and you should be able to get them in your local asian supermarket without any problems. You’ll need:

dark soy sauce (thick; Healthy Boy Brand)

dark brown sugar

superior dark soy sauce (we mostly use Pearl River Bridge)

For the udon noodles we have come to the conclusion that we like the frozen udon noodles best. Because sometime the packaged (fresh) noodles have a plasticky smell and taste to them, which personally bothers us quite a bit so that‘s why we mostly use frozen udon in our recipes, insofar as we can get hold of them.

Other than that the recipe is prety self-explanatory. Mix together the sauce ingredients, add the sauce to a large pan, add in the udon noodles and cook until the sauce starts to thicken. You’ll always want to cook the udon noodles in the sauce on their own before adding in the veggies, especially if you’re using frozen udon noodles, beause otherwise the veggies will be overcooked by the time the noodles are done. Once your noodles are (almost) done you can add in your fresh veggies and any other add-in‘s like tofu or mushrooms and stir fry everything for an additional minutes until the veggies are done. And that’s it. Now you’re ready to enjoy your quick, easy and super delicious undon noodles.

Ingredients
  • 2 pieces frozen udon noodles (or 2 packets fresh udon noodles)
  • 200g veggies (broccoli, sugar snap peas, onion)
  • 100g oyster mushrooms
  • 100g Tofu
For the sauce
  • 2 tbsp dark soy sauce (thick; Healthy Boy Brand)
  • 2 tbsp soy sauce
  • 200ml vegetable stock
  • 1 tbsp dark brown sugar
  • 1 tsp superior dark soy sauce (we mostly use Pearl River Bridge)

Zubereitung

Instructions
  1. Cut your tofu into your prefered size and fry in a hot pan until brown and crisp. Take out of the pan and set aside. Now fry the oystermushrooms on both sides, take out chop and set aside.
  2. Combine all the sauce ingredients in a bowl and whisk until the sugar is dissolved.
  3. Heat up a large pan. Add in your (frozen or fresh) udon noodles and cover with the prepared sauce. Cook on medium to high heat, stirring occasionally until the sauce starts to thicken (this will take up to 5 minutes).
  4. Add in your fried tofu and oystermushrooms as well as the fresh veggies to the pan. Stir.
  5. Stir fry for an additional 1-2 minutes.
  6. Serve with fresh chili, chopped corriander or toasted sesame seeds. Enjoy!
