REFRESHING KALE SALAD
This salad will definitely knock your socks off. The dressing of orange juice, mustard and black pepper makes the salad super refreshing and the addition of pomegranate seeds and orange fillets makes it a sour-sweet taste experience. The toasted walnut kernels as a topping round off the whole thing perfectly. Super delicious as a side salad or as a light lunch with some fried tofu cubes on top. REFRESHING KALE SALAD

Ingredients
- 300g kale
- 1 orange
- Pomegranate seeds
- 10 walnuts
For the dressing
- 1 orange
- 1 ½ tsp mustard
- 1 tbsp lemon juice
- 1 tbsp vinegar
- Pepper (we like to use freshly ground pepper)
- Salt

Instructions
- Wash the kale well and chop coarsely, place in a large bowl. If you prefer, blanch the kale briefly (for 1 minute) and then rinse in cold water, this will soften it slightly and give it a bright green colour.
- Fillet the orange and collect the excess juice in a bowl. If this is too much work for you, you can simply peel the orange and cut the slices into pieces.
- Chop the walnut kernels and roast them in a pan until they are lightly brown and fragrant.
- Halve the orange for the dressing and press out the juice (add the juice from filleting your orange, if you did so). Add the remaining ingredients for the dressing to the orange juice and mix well.
- Pour the finished dressing over the kale and knead it into the kale with both hands. This way the kale will absorb the dressing perfectly.
- Garnish with pomegranate seeds, orange slices and toasted walnuts. Enjoy!
