Zaru soba is a traditional chilled noodle dish. The soba noodles are made of buckwheat flour and typically served cold with a soy dipping sauce. In our recipe we put the noodles directly in the sauce and top them with fried garlic and spring onion for additional texture and flavor. Zutaten

Ingredients
  • 200g soba noodles
  • 2tbsp lemon juice
  • 2tbsp soy sauce
  • 2tsp red chili flakes (optional)
  • 6tbsp cooking water (from the noodles)
  • 1 spring onion
  • 4 garlic cloves
  • 1tsp chili oil
  • 1tsp sesame oil
  • Toasted sesame seeds

Zubereitung

Instructions
  1. Cook your soba noodles in boiling water for 2-3 minutes (or according to the package instructions). Drain your noodles and keep some of the cooking water. Put the noodles in a bowl of ice-cold water for a few minutes.
  2. Meanwhile combine the soy sauce, cooking water, lemon juice and the red pepper flakes in a bowl. Then drain your noodles and put them in the bowl with the sauce and combine.
  3. For the garlic crunch peel and thinly slice your garlic. Heat up the chili and sesame oil in a pan and fry the garlic for several minutes until crisp and brown, season with salt.
  4. Serve the noodles with your fried garlic, fresh spring onion and toasted sesame seeds. Enjoy!
